Pancake Muffins Recipe
Ingredients
1 ½ cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
½ teaspoon baking soda

1 cup milk
1 egg
2 tablespoons melted butter or oil
1 teaspoon vanilla extract

Instructions
Preheat your oven to 350°F
Grease or line a muffin pan
In one bowl, whisk together the dry ingredients
In another bowl, mix the milk, egg, melted butter, and vanilla

Scoop the batter into the muffin pan, filling each cup about three-fourths full
Bake for 12 to 15 minutes or until a toothpick comes out clean
